Avocado Sandwiches with Dill Sauce

adapted from Alicia C. Simpson, Quick and Easy Vegan Comfort Food

Dill sauce:

¼ cup vegan mayonnaise (try Vegenaise)
¼ cup vegan sour cream (try Tofutti Better Than Sour Cream)
¼ cup fresh dill weed, chopped

Sandwiches:

8 slices bread
½ medium bell pepper (any color), sliced
1 small tomato, sliced
2 avocados, sliced into at least 4 strips per avocado half
½ small red onion, sliced thin (optional)

Directions:

  1. In a small bowl, mix the vegan mayo and sour cream. Stir in the chopped dill weed until thoroughly combined.
  2. Toast the bread.
  3. Lay out the slices of bread, spread each slice with the dill mixture, and layer the remaining ingredients as you'd like. (We use 2 bell pepper slices, 2 tomato slices, and 4 avocado strips per sandwich.)
