"Chicken" Pesto Sandwich

Pesto recipe from Chef Jason, The Vegan Culinary Experience

The Pesto:

1 cup basil leaves
¼ cup olive oil
⅛ teaspoon salt
1 clove of garlic
¼ cup pine nuts

Directions:

  1. Place the pine nuts in a food processor, followed by the garlic and salt, olive oil, and finally the basil.
  2. Press down on the basil.
  3. Pulse the ingredients about five times to get them mixed a bit.
  4. Blend the ingredients until they are well combined yet still a little coarse.

The Sandwich:

2 slices of bread
1 Boca Chik'n Patty
2 tablespoons vegan pesto (see recipe above)
1 tablespoon vegan mayo (try Vegenaise)
2 small tomato slices
2 large lettuce leaves

Directions:

  1. Prepare the Boca Chik'n Patty according to the directions on the box. We recommend placing it in a frying pan and cooking for about 12 minutes, flipping until both sides are browned.
  2. While the "chicken" patty is cooking, toast the bread slices.
  3. Spread a tablespoon of pesto on one bread slice. Then place the Boca patty, tomato slices, and lettuce on this slice.
  4. Spread one tablespoon of pesto and the vegan mayo on the other bread slice and close the sandwich.
