Chocolate Cake

from Colleen Patrick-Goudreau, The Joy of Vegan Baking

1½ cups unbleached all-purpose flour
¾ cup sugar
½ teaspoon salt
1 teaspoon baking soda
¼ cup unsweetened cocoa powder
1½ teaspoons vanilla extract
⅓ cup canola oil
1 tablespoon white distilled vinegar
1 cup cold water

Directions:

  1. Preheat the oven to 350°F.
  2. Mix the dry ingredients in a large bowl.
  3. Add the wet ingredients to the dry mixture and mix until just combined.
  4. Pour into a lightly oiled 9-inch cake pan and cook for 30 minutes, or until sticking a toothpick in the center comes out clean.
