Cream of Celery Soup

adapted from Cooking with PETA

½ cup chopped onion
4 cups chopped celery
2 cloves garlic, minced
½ tablespoon olive oil
2 cups vegetable stock
1½ teaspoons salt
¼ teaspoon dried dill
1 cup plain soymilk
Green onions, chopped (optional)
Fresh dill (optional)

Directions:

  1. In a large soup pot, sauté the onion, celery, and garlic in the oil for several minutes.
  2. Add the vegetable stock and simmer for about 10 minutes or until the celery becomes softer.
  3. Pour the soup into a blender and blend until creamy. (A hand blender also works.)
  4. Return the soup to the pot and stir in the salt, dillweed, and soymilk. Watch the soup carefully and remove from the heat as soon as bubbles start to appear.
  5. Serve hot, garnished with chopped green onions or a sprig of fresh dill.

Makes 5 cups.
