Creamy “Bacon” and Orange Salad Dressing

adapted from Cooking with PETA

6 tablespoons freshly-squeezed orange juice (from 1 large orange)
¼ cup soft tofu
¼ cup vegan mayonnaise (try Vegenaise)
1½ tablespoons fresh lemon juice
1 tablespoon Dijon mustard
White bulbs of 3 green onions, chopped
1 teaspoon soy bacon bits or chips
1 teaspoon sugar
½ teaspoon sesame oil
¼ teaspoon salt

Directions:

  1. Place all the ingredients in a blender and process until creamy.
  2. Pour the dressing over salad and refrigerate the leftover dressing.
