French Toast

2 cups vanilla soy milk
4 to 5 tablespoons flour
3 teaspoons sugar
Dash of cinnamon
Bread slices
Maple syrup or powdered sugar (optional)

Directions:

  1. Mix flour, soy milk, sugar and cinnamon to form a batter.
  2. Pour the batter on a plate or other shallow dish. Use a fork to get any flour lumps out, if desired.
  3. Quickly dip a slice of bread in the batter. After dipping on both sides, then hold the bread over the plate to allow excess batter to drip off.
  4. Fry in a lightly greased pan until golden brown. Sprinkle with powdered sugar or maple syrup if desired.
  5. Repeat with remaining bread and batter.
