"McGriddle" Sandwich

4 slices Gimme Lean (vegetarian ground sausage)
½ teaspoon turmeric
¼ teaspoon salt
¼ teaspoon cumin
¼ teaspoon chili powder
1 tablespoon olive oil (plus extra for frying)
2 slices extra firm tofu (try Nasoya—Extra Firm)
4 vegan English muffins (try Shaw's Supermarket or Whole Foods brand)
2 slices vegan cheese (try Tofutti Soy Cheese Slices—American style)

Directions:

  1. Cut 2 slices of Gimme Lean sausage and use your hands to flatten them into patties (about ¼-inch thick). Set aside.
  2. Drain the block of tofu and wrap it in paper towels. Press down to squeeze the liquid out, and repeat several times with dry paper towels to remove excess liquid.
  3. Lightly oil a frying pan and place it on medium heat.
  4. Carefully slice the tofu widthwise to make a slice that is about ¼-inch thick (or a little thicker).
  5. Mix the turmeric, salt, cumin, and chili powder on a plate with 1 tablespoon of olive oil. Then, put the tofu on this plate and rub it into the mixture, coating on both sides. Cut the tofu slice in half.
  6. Place both halves of the tofu slice and the 2 sausage slices in the frying pan. Cook for about 10 minutes or until the tofu is browned, flipping the tofu and sausage every few minutes. Meanwhile, toast 2 English muffins.
  7. Assemble 2 McGriddle sandwiches: On each English muffin, place one of the tofu halves on the bottom, topped with half of a soy cheese slice and 1 sausage patty.
  8. Repeat the steps above (except 2 and 3) with the remaining ingredients to make 2 additional sandwiches.

Variation: Use toasted bread with 1 whole ¼-inch tofu slice, 1 whole slice of soy cheese, and 2 sausage patties.
