Quick Apple Crisp

adapted from Robin Robertson, 1,000 Vegan Recipes

When you want the flavor of apple pie without the bother of a crust, this quick crisp is the way to go!

5 Granny Smith apples
½ cup pure maple syrup
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
½ cup all-purpose flour
½ cup old-fashioned (NOT instant) oats
½ cup finely chopped pecans or walnuts
⅔ cup light brown sugar
½ cup vegan margarine, softened

Directions:

  1. Preheat the oven to 350°F.
  2. Peel the apples and cut them into ¼-inch slices. Throw away the apple cores.
  3. Lightly oil a 9-inch square baking pan and place the apple slices in the pan. Drizzle the maple syrup and lemon juice over the apple slices and sprinkle with ½ teaspoon of the cinnamon. Set aside.
  4. In a medium bowl, mix the flour, oats, pecans (or walnuts), sugar, and the remaining ½ teaspoon of the cinnamon. Use a fork to mix in the vegan margarine and then use your hands to mix the ingredients together more thoroughly.
  5. Break the mixture into coarse crumbs with your hands and pour them over the apple slices. Bake until bubbly and lightly browned on top, about 45 minutes. Serve warm.
