Quick BLT

adapted from VegCooking.com

1 teaspoon olive oil
2 slices vegan bacon (try Lightlife Smart Bacon)
2 slices bread
1½ tablespoons vegan mayonnaise (try Vegenaise)
2 tomato slices
Romaine, spinach, or other dark leafy salad greens
½ avocado, sliced (optional)

Directions:

  1. Heat the olive oil in a small skillet over medium heat.
  2. Add the vegan bacon and flip occasionally. Cook for about 10 minutes or until the edges of the “bacon” are browned. While the fake bacon is cooking, toast the bread.
  3. Spread vegan mayonnaise on the bread and top with the “bacon,” tomato slices, greens, and avocado.

Variation: If you like a little extra kick, try sprinkling on hot sauce or salt for more flavor.
