Soy Meatball Sub

adapted from VegCooking.com

4 vegetarian meatballs (try Nate's Meatless Meatballs)
¼ cup marinara sauce or tomato sauce of your choice
⅛ cup grated vegan mozzarella (try Follow Your Heart brand)
1 hoagie roll

Directions:

  1. Preheat the broiler to low.
  2. Heat the meatballs and the sauce together in the microwave for about 3 minutes or until warm.
  3. Place the meatballs on one half of the hoagie roll and top with the marinara sauce and soy cheese.
  4. Place both hoagie halves on an aluminum foil-lined baking sheet. Cook in the oven for about 10 minutes or until the bread is toasted. Remove from oven and close the sandwich.
