Tofu Scramble

adapted from Mercy for Animals

12 to 14 ounces firm or silken firm tofu
⅛ teaspoon turmeric
1 teaspoon onion powder
½ teaspoon salt
1 cup of your favorite vegetables, such as broccoli, fresh mushrooms, onions, tomatoes, or bell peppers.

Directions:

  1. Drain the tofu and pat it dry with paper towels, pressing down to remove excess liquid.
  2. Mash the tofu and place it in a lightly-oiled sauté pan. Cook over medium heat for 3 minutes.
  3. Add the remaining ingredients, stir well, and cook for 5 to 8 minutes, until the vegetables are cooked and the tofu is heated through.
