Tofurky Melt

2 slices of bread
3 Tofurky deli slices (try the Peppered flavor)
1 non-dairy cheddar slice (try Tofutti)
1 tablespoon vegan mayo (try Vegenaise)
1 teaspoon non-dairy butter (try Earth Balance)
2 tomato slices (optional)
2 Romaine lettuce leaves (optional)

Directions:

  1. Heat a frying pan at medium heat with half a teaspoon of non-dairy butter.
  2. Spread the vegan mayo on one bread slice. Add the Tofutti cheese and then the vegetarian deli slices. Close the sandwich and place in the pan.
  3. When the bread is browned on one side, add another half a teaspoon of non-dairy butter to the pan and flip the sandwich. Continue flipping until browned to your satisfaction.
  4. Remove from pan and place the tomato slices and lettuce in the sandwich, if desired.
